Potato Pancakes

Ingredients:
8 large, peeled potatoes, shredded
4 small onions, grated
8 eggs
1/2 cup milk
1/2 cup melted butter
1 cup flour
2 teaspoons salt
pepper, to taste


Directions:
Lock the Food Processor bowl in position and insert the SHREDDER Disc. Cover.

Cut potatoes and onions to fit chute and grate at high speed. Remove cover and shredder disc.

Place potatoes and onions in medium mixing bowl.

In another bowl or processor bowl with the STEEL Blade. Add eggs, milk and melted butter; Mix or process at low speed; then add flour, salt and pepper and process to mix.

Pour mixture over grated potatoes and onions. Stir to combine.

Pour the batter from a 1/4 cup measure onto a hot, greased griddle. Spread to make a 4-inch pancake. Brown on each side.

Best when served immediately.
