Sweet and Sour Sauce

This sweet and sour sauce is a homemade version of the classic Asian sauce that takes just minutes to make and uses common pantry ingredients. Ingredients:
1 cup pineapple juice
3/4 cup packed brown sugar
1/3 cup rice vinegar
3 tablespoons ketchup
2 tablespoons soy sauce
2 - 3 drops red food coloring

CORNSTARCH SLURRY:

1 1/2 tablespoons cornstarch
2 tablespoons cold water


Directions:
Place the pineapple juice, brown sugar, rice vinegar, ketchup and soy sauce in a small pan over medium high heat and bring to a boil.

In a small bowl, mix together the cornstarch and cold water.

Slowly whisk the cornstarch slurry into the sauce and simmer for 1 minute until thick, stirring constantly.

Stir in the red food coloring. Cool slightly and use right away, or refrigerate for later use.

*Can store in refrigerator in an airtight container 2-3 weeks.
