Sawdust Salad
A classic Southern vintage congealed salad recipe, that be used as either a sweet side salad or a light dessert for a heavy meal. This recipe calls for lemon and orange Jell-O, but you could use almost any citrus flavor. Other recipes use grated cheese for the topping, but this recipe calls for coconut, which can be toasted – hence the name "Sawdust Salad". I will have to do a bake-off one day and post the results!

Ingredients:
1 (3-ounce) package
lemon jello
1 (3-ounce) package
orange jello
2 cups hot
water
1/2 cup cold
water
1 large can
crushed pineapple drained (reserve juice)
1 small package
miniature marshmallow
2 - 3 sliced
bananas
SECOND LAYER
1 cup
sugar
2
eggs
5 tablespoons
flour
2 cups
pineapple juice (reserved plus extra juice if needed)
THIRD LAYER
2 packages
dream whip
8 ounces
cream cheese
1 cup
milk
coconut
Directions:
FIRST LAYER
Make Jell-O; add pineapple – cool – pour into 9-inch by 13-inch pan cover with sliced bananas – sprinkle with marshmallows (colored ones pretty) and congeal. semi-sink bananas and marshmallows in gelatin.
Refrigerate
SECOND LAYER
Mix – cook until thick – cool – spread over jello
THIRD LAYER
Mix Dream Whip and 1 cup milk – add softened cream cheese.
Spread over the second layer and sprinkle with coconut.
