Caprese Sausage Skillet

Ingredients:
1 (10-ounce) package Basil, Mozzarella and Sun-dried Tomato
Chicken Sausage, sliced diagonally at a 45-degree angle to desired thickness
olive oil
1/2 large
onion, diced
3 cloves
garlic . minced
1 (6-ounce) can large, pitted
black olives, quartered
1 (12-ounce) jar drained
marinated artichoke salad, roughly cut and olives quartered
1/3 (16-ounce) carton
Penne pasta, cooked and drained
2 large
tomatoes, cut in wedges
3-5 tablespoons
tomato paste
1 1/2 cups baby
spinach leaves, chopped
salt, to taste
black pepper, to taste
fresh parmesan or
feta cheese garnish
Directions:
Cook Penne pasta according to package directions. Drain. Set aside.
In a large skillet sauté onions and garlic in olive oil. Add sausage coins and heat through.
Start adding olives, artichoke salad bits, salt and pepper.
Add some tomato and basil paste to taste.
Stir in spinach and tomatoes. Heat just until heated through.
Toss with Penne pasta. Serve and top with Feta cheese.
Serve with hard rolls or garlic bread.
