Instant Pot - Baby Back Ribs

Instant Pot Baby Back Ribs are a definitely a game changer - tender, juicy flavorful ribs no matter the weather and ready in less than an hour!  These BBQ Ribs are fall- apart tender with the most tasty Sweet and Tangy BBQ sauce!  They're so quick, easy and delicious you'll never make them any other way! Ingredients:
6 pounds Baby Back Ribs, (2 racks of 12-13 ribs each)
3/4 cup brown sugar
1 tablespoon garlic powder
2 teaspoons paprika
1 1/2 teaspoons dry mustard
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon cayenne (optional)
1 cup chicken stock
1 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 cups rib cooking liquid from the instant pot
3/4 cup Ketchup , (I use Simply Heinz with no high fructose corn syrup)
1/2 cup mustard
1/2 cup apple cider vinegar
6 tablespoons pure maple syrup , (or honey if preferred)
4 garlic cloves
1/2 teaspoon pepper
1/4 teaspoon cayenne (another 1/4 teaspoon for more spice)


Directions:
Combine all dry ingredients for the ribs in a medium bowl and mix well. Peel away the thin membrane from the back of the ribs (some ribs come with this already removed - see notes for more details on this). Using your hands, coat each rack of ribs thoroughly with the dry rub. Cut rack of ribs into 3-rib sections.

Pour chicken stock, garlic powder, and salt in the Instant Pot. Place the wire rack insert in the bottom of the pot. Arrange ribs standing on their ends in the pot. Start by placing them around the outer edge then the inner area. Turn the pressure valve to SEALED. Set the IP to Meat/Stew and set the timer for 30 minutes

Meanwhile, put all the BBQ Sauce ingredients into a sauce pan and bring to a boil. Turn down the heat slightly to a high simmer for 10 minutes. Remove from heat and set aside. (You can skip this step if you want to use your favorite bottled variety of BBQ sauce.)

When the time is up, manually release the pressure valve on the Instant Pot. Carefully remove ribs with tongs and set on a Baking sheet, meat side up. Brush the sauce on all sides of the ribs and broil for 4-5 minutes. All broilers are different so be sure to watch the ribs while they’re in the oven to ensure they do not burn. Serve with more sauce and enjoy!
