Light and Fruity Pie

I like the Mandarin orange variation of this pie. It is so refreshing.

Ingredients:
1 (3-ounce) package orange jello substitute flavor for different fruit
2/3 cup boiling water
2 cups ice
1 (8-ounce) container thawed cool whip
1 (15-ounce) can mandarin orange segments, drained and roughly chopped
1 graham cracker pie crust


Directions:
1.Dissolve Jell-O completely in boiling water, stirring about 3 minutes. Add ice cubes and stire until gelatin is thickened, about 2-3 minutes. Remove any unmelted ice.

2. Blend in Cool Whip®, then whip until smooth

3.Fold in fruit. Chill if necessary, until mixture will mound.

4.Spoon into crust

5.Chill 2 hours

6.Garnish, if desired

Variations:
1 can (8 3/4 ox.) Apricots, Peaches drained and diced
1 can (8 3/4 oz) Fruit Cocktail, drained
1 can (8 1/4 oz) Crushed Pineapple, drained
1 cup fresh strawberries, diced
