4 cups chopped Romaine lettuce
1/2 cup plain greek-style yogurt
1/4 cup roughly chopped cilantro
3 thinly sliced scallion

Directions:
Step 1

Preheat oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.

Step 2

Heat oil in a large skillet over medium heat. Add onion; cook, stirring, until softened, about 5 minutes. Add beef; cook, stirring to crumble, until browned, about 5 minutes. Add tomatoes and their juices, hominy, beans and chiles; simmer, stirring occasionally, until the mixture has thickened slightly, about 5 minutes.

Pour the mixture into the prepared pan. Top with tortilla chips and cheese. Cover with foil and bake for 30 minutes. Uncover and bake until lightly browned and bubbling on the edges, about 10 more minutes.

Step 4

Let stand for 10 minutes before serving. Serve with romaine, yogurt, cilantro and scallions.
